Dehydration is a method of food preservation, in which moisture is removed from the food.
Drying food extends the shelf life of a food by decreasing growth of bacteria and minimizing spoilage.
Dehydrated foods can be eaten in their dried state or rehydrated for future use by soaking in water or adding to soups and sauces.
Removing the desired amount of moisture can take several hours. Dehydrated foods may change colour a bit, weigh less, and appear irregularly shaped compared to their fresh state.
Our forebears dehydrated foods using sunlight by drying them whole or processed but the end result wasn’t even, hence the need for more sophisticated methods.
